PROSCIUTTO WRAPPED CHICKEN WITH PEACHES

  This PROSCIUTTO WRAPPED CHICKEN WITH PEACHES might jus be the best recipe I have ever made. The salty sweet combo is really what makes this dish come together.

Prosciutto Wrapped Chicken with Peaches

  Okay, lets talk peaches for a hot minute. One of my absolute favorite ways to have peaches is by grilling them and then drizzling some balsamic vinegar over the top.  If you haven’t gotten on the grilled peach train you best do so STAT.  Well, that got me thinking about that combo and what would taste delicious with it, but as an actual meal and not a snack. Then it hit me! I’ve always loved fruit wrapped in prosciutto, that slightly sweet with salty combo is just amazing.  But since I needed more I figured why not wrap some chicken in it and thus Prosciutto Wrapped Chicken with Peaches was born!

Prosciutto Wrapped Chicken with Peaches

  I personally like to use bone in chicken quarters, but you can use boneless chicken breasts if you like!  I enjoy pairing this meal with some roasted asparagus or brussels sprouts.  I just cook it in the oven alongside the Prosciutto Wrapped Chicken with Peaches. 

  And don’t even get me started on the leftovers!  I actually really enjoy eating this cold!  But you are more than welcome to warm it up.  I also like cutting it all up and adding it to a salad! One more thing, before I forget, my kids CONSUMED this so fast.  I barely put it on their plate before they were asking for more! 

PROSCIUTTO WRAPPED CHICKEN WITH PEACHES

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 5

Ingredients

  • 5 chicken breasts, or chicken quarters
  • 1 package of prosciutto
  • 1 large yellow peach, sliced
  • 1/2 shallot, finely chopped
  • 1 tsp sea salt
  • 2 tsp fresh black pepper
  • Drizzle of oil
  • Fresh basil for garnish
  • PEACH BALSAMIC GLAZE:
  • 1 cup diced peaches
  • 2 cups balsamic vinegar
  • 1 tbsp fresh basil

Instructions

    OVEN METHOD:
  1. Turn oven on to 375 degrees F.
  2. Take your chicken and wrap with a piece of prosciutto. Place chicken in an oiled oven safe skillet.
  3. Sprinkle salt and pepper on the top and add chopped shallot and sliced peaches to the skillet. The peaches can go on top of the chicken and around it!
  4. Drizzle the entire dish with a little more oil of choice and place into the oven for 35 minutes or until internal temperature of the chicken equals about 160 degrees.
  5. While the chicken is cooking, make your peach balsamic glaze.
  6. Add 2 cups balsamic vinegar to a small pot. Bring to a small boil then add in the diced peaches and 1 tbsp fresh basil. Stir to combine.
  7. Let cook for 10 minutes, stirring occasionally to prevent from burning, until balsamic vinegar has reduced by half and starts to get thick.
  8. Remove chicken from the oven and pour the peach balsamic glaze over the top, and garnish with some more fresh basil!
  9. SMOKER METHOD:
  10. Turn smoker to 325 degrees F.
  11. Wrap your chicken in prosciutto and place in a skillet. Add in the sliced peaches and the chopped shallot.
  12. Place onto your smoker and let smoke for 20 minutes.
  13. Make your peach balsamic glaze during that 20 minutes. Once the time is up, pour the glaze all over the chicken.
  14. Close the smoker back up and let the chicken cook for another 20-25 minutes or until internal temperature equals about 160 degrees.
  15. Remove, let sit for 5 minutes, and garnish with fresh basil!
