CARAMELIZED ONION BREAKFAST SAUSAGE

I’m always looking for new flavor combos with sausage and this Caramelized Onion Breakfast Sausage is absolutely divine.  The sweet onions pair so nicely with the pork.  Your mouth will thank you.  I promise.

Caramelized Onion Breakfast Sausage

 

Sausage patties are one of the easiest things you can make.  Basically you just mix whatever you feel like putting in there and then cook it up for a few minutes. Bada bing, bada boom! You now have yourself some sausage patties. My favorite part about these is that you can freeze them until you are ready to use them.  I prefer to cook them first, then let them cool, but you can also freeze the patties raw.  Just make sure that when you freeze them, whether cooked or not, that you put wax paper between the patties.  No one likes patties that stick together!

I usually use ground pork, but if you do not eat pork, ground chicken and turkey are good substitutes.  Chicken and turkey tend to be more sticky, so make sure you work with the meat when it’s really cold.  I like to mix everything together, then put it in the fridge for about 10 minutes to firm it up, then roll and flatten into patties.

Caramelized Onion Breakfast Sausage

Now lets talk caramelized onions for a hot second.  You gotta cook these babies low and slow to really get them nice.  You want that deep deep golden brown and the onions will turn slightly sweet.  Give it at least 10 minutes if not longer.  They are great to make during your meal prep days.  Cook them up, then place in an air tight container.  You can throw them on anything….salad, in soup, over any meat, on your eggs.  Caramelized onions are just so dang versatile!

CARAMELIZED ONION BREAKFAST SAUSAGE

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 6-8

Ingredients

  • 1 lb ground pork
  • 1/2 large yellow onion, diced
  • 1 tbl ghee
  • 1 garlic clove, minced
  • 1 tbl balsamic vinegar + 2 tbl
  • 1 tsp dried fennel
  • 1 1/2 tsp sea salt
  • OPTIONAL: fresh parsley or cilantro as garnish

Instructions

  1. Heat up your ghee in a skillet on med-low.
  2. Once melted add in your diced onions. Mix until onions are well coated.
  3. After 5 minutes of cooking, sprinkle a little salt over the onions and add in 1 tbl of balsamic vinegar. Stir to combine.
  4. Continue stirring every 3-5 minutes until the onions are very very dark in color (and almost slimy looking)
  5. Remove onions and place in a bowl along with the ground pork, minced garlic, 2 tbl balsamic vinegar, fennel and sea salt.
  6. Mix everything up and roll into balls, then press to form patties.
  7. Put into the same skillet that you cooked the onions in. Let cook 3-5 minutes per side.
  8. Remove once done and garnish with fresh parsley or cilantro

  1. I just recently discovered the awesomeness that is caramelized onions. I want them in everything I can’t wait to try these this weekend.

  2. What temp do you cook your patties at? I tend to cook too hot and the inside is raw, or cook too low and it sticks and dries out.

    1. I cook them at med. Try making a thumb print in the middle of your patties to help them cook through.

    1. You can do regular butter or oil of choice. I like avocado oil cause it’s neutral taste and high smoke point!
