Few things are better than a roasted potato, but I”m here to tell you that these PARMESAN CRUSTED POTATOES take the cake with deliciousness! These simple, delicious potatoes are sure to please anyone you make them for, whether its for your family, or for a get together during the holidays; these will be the star of the table!
As I mentioned earlier, these are no ordinary roasted potatoes, these are “elevated” potatoes!! And do you wanna know the trick to making these PARMESAN CRUSTED POTATOES so bomb diggity?! Scoring them like the picture so that all the yummy goodness gets in all the nooks and crannies!
I find that yukon gold potatoes or red pototoes work best for this recipe; don’t you dare use russets. They are too mushy for this dish and you will end up with more of a mashed situation. Although, not gonna lie, that would still be out of this world scrumptious! I specifically made these parmesan crusted potatoes for Thanksgiving, but you can have them any time of the year. Just thought I’d give you another option for potatoes this holiday season!
Use your favorite seasonings; the ones I share in the recipe give you just an idea, although I have to say that the herbs I use for the Parmesan Crusted Potatoes are *chef’s kiss.*
Ingredients
- 2 lbs medium yukon gold or red potatoes, halved and scored
- 1 cup melted butter
- 3/4 cup parmesan cheese
- 2 cloves of garlic, minced
- 2 tbsp fresh rosemary
- 1 tbsp fresh sage
- 1 1/2 tbsp fresh thyme
- 1 tsp sea salt
- 1 tsp ground black pepper
- spray oil for the top of the potatoes
Instructions
- Preheat oven to 425 degrees F.
- Wash you potatoes and slice in half.
- Take each half and score them being careful not to cut all the way through the potato.
- Set aside while you make your parmesan mixture.
- To make your mixture, melt butter and pour it into a sheet pan or casserole dish.
- Next, add in your herbs, the minced garlic, salt, pepper, and the parmesan cheese.
- Stir everything together until its well mixed, then spread evenly on the pan.
- Place your potatoes "scored" side down on top of the mixture then spray the top of the potatoes with your favorite spray oil.
- Put in the oven and let roast for 25-30 minutes until the potatoes are nice and roasted.
- Remove and enjoy!
Like I mentioned earlier, these potatoes are very versatile, use whatever blend of herbs and seasonings you wish! But come on!! Just look at the crusty bits of goodnes in the picture. Seriously drooling just seeing the picture!
