If you like poppers, then you are gonna be super stoked about these MINI BELL PEPPER POPPERS. These delicious little poppable snacks are perfect for a party, a bbq, a side dish with dinner, or a sports party. Really anything!
So, obviously these are not my typical Whole30 or Paleo recipe I have on here, but duuuuuude, these HAD to go on the blog. My husband used to make them all the time and we always hated the fact that he never made enough. Pretty rude if you ask me 😉
At first I was thinking about trying to make these “cleaner” but heck sometimes you just can’t mess with the OG. If you are looking for a cleaner recipe I do have PALEO JALAPENO POPPERS that are just to die for! Now if you absolutely can’t do dairy, then there are some other options out there. You can try KITE HILL products. They are delish and would probably be *almost* as good as these Mini Bell Pepper Poppers! lol
I love using the mini bell peppers for this because sometimes hot can be too hot, if you know what I mean! Don’t get me wrong, spicy foods are my jam, but the regular bell peppers give this recipe a nice balance. My kids can even handle it and ask for it frequently. I should note though, that my children enjoy spicy-ish foods. These Mini Bell Pepper Poppers definitely still have a “kick” to them! Anyway, lets get to the recipe shall we!
Ingredients
- 1 lb mini bell peppers, halved and de-seeded
- 8 oz Philadelphia "Jalapeno" cream cheese
- 8 oz sharp cheddar cheese, freshly grated
- OPTIONAL: bacon pieces
Instructions
- Preheat oven to 375 degrees F.
- Slice bell peppers in half and remove the seeds. Place each bell pepper open side up on a parchment lined baking sheet.
- Shred your sharp cheddar cheese and add to a bowl.
- Mix the jalapeno cream cheese to the shredded cheddar cheese and if using bacon crumbles, add those in as well.
- Scoop the cheese mixture into the bell peppers.
- Place the bell peppers into the oven and cook for 15 min.
- Remove and enjoy!
- Place over indirect heat for 10-15 minutes turning every couple of minutes to prevent burning.
- If using a smoker, set smoker to 375 and place bell peppers on a veggie sheet and cook for 10-15 minutes or until cheese is melted
