Move over onion rings because these BREADED DELICATA SQUASH RINGS have just moved in! They are delicious, and savory, and after you take a bite, you will see why they have kicked onion rings to the curb!
If you follow me on INSTAGRAM you all know delicata squash is one of my favorite squashes out there. I look forward to seeing them in stores all year. They are also the only squash my kids will actually eat, which is always a win in my book!
This recipe happens in a couple steps. Just pan frying them doesn’t cook the squash so you need to bake them first for a little bit. But don’t worry, it’s all really easy to do and definitely worth doing the couple of steps. Any type of flour will work when dredging to make the Breaded Delicata Squash Rings. I used Bob’s Red Mill gluten free flour for it, but like I just said, any flour will work and you don’t need to change the ratios. Remember though, if you are currently doing a Whole30, you need to use almond or coconut flour.
I like to eat the breaded delicata squash rings right away while they are still piping hot. But my husband had them hours later when he got home from work and said they were awesome cold. Honestly I don’t know if I agree with him haha, I like that hot crispy crunch! I love dipping it in a dairy free ranch dressing. You can make your own or there are a few options in grocery stores.
Ingredients
- 1 delicata squash, seeds removed, sliced into rings
- 1 egg, whisked
- 3/4 cup gluten free flour or almond flour
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 tsp sea salt
- pinch of cayenne pepper
- 2 tsp dried parsley
- 1 cup avocado oil, for frying
- Ranch dressing for dipping
Instructions
- Preheat oven to 400 degrees.
- Slice your delicata squash into rings and remove the seeds.
- Grab 2 shallow bowls, 1 for the egg and the other for the flour.
- Whisk the egg in one bowl and in the other bowl, mix the flour and seasonings.
- Dredge the squash rings by placing into the eggs and then into the flour mixture. Place each ring on a wire rack over a sheet pan.
- Put the sheet pan into the oven and let bake for 12 minutes. Remove from oven and set aside. It's okay if the flour doesn't look browned or cooked. It will finish cooking in the oil.
- In a medium skillet heat up the oil. You will know when the oil is hot enough when you sprinkle a little water in it and it bubbles up.
- Add in the delicata squash and let cook 3 minutes per side.
- Place on a paper towel to soak up extra oil
- Sprinkle a little more dried parsley over the top and enjoy with some dairy free ranch dressing
