This healthy, simple, and absolutely delicious BROCCOLI BACON FRITTATA is so ready for your face this weekend! This will easily become one of those meals that’s always in rotation!
We love a good frittata in our house. Sometimes we call them fridge dump frittata’s cause we just mix whatever we have on hand and consume for the week. Frittata’s are great to make ahead of time so you can nosh on them whenever you feel like it. I would not judge if you decided to eat this on your commute to work, or at school drop off! Sometimes you gotta do what you gotta do!
What’s great about frittata’s is that you can eat them cold and they are equally as scrumptious as they are warm. In fact, I actually prefer to eat them cold. That’s good news if you are on the go and hunger! If you just can’t eat it cold then we can no longer be friends. Just kidding. I’ll always be your friend, but I’ll give you major side eye while I watch you reheat it. Just kidding again. That would be weird if I was in your house watching you!! You can reheat in the microwave, or on the stove-top, and it will keep in an air tight container in the fridge for a week.
Like I mentioned earlier frittata’s are super versatile. Put the bacon and broccoli in it, but if you wanna add in some diced or caramalized onion go ahead. Feeling like some cheese??? Grate some right over the top! Hate bacon (how could you?!) do chicken and apple sausage, or leftover cut up steak. Options are endless!
Ingredients
- 2 cups roughly chopped broccoli
- 4 slices of bacon, diced
- 12 eggs, whisked
- 1 1/2 tsp garlic powder
- 1 tsp dried minced onion
- 1/2 tsp sea salt
- 1 tbl nutritional yeast
Instructions
- Preheat your oven to 350 degrees.
- Get a large oven safe skillet nice and hot. Once hot add in the diced bacon. Cook, stirring occasionally, for about 5 minutes.
- Add in the chopped broccoli to the bacon and stir again to combine. Cook another 5 minutes until broccoli starts to get soft. Turn stove off.
- In a large bowl whisk the eggs, seasonings, and nutritional east together. Carefully pour right over the broccoli and bacon mixture making sure the eggs are evenly dispersed.
- Place in the oven and let bake for 12-15 minutes or until eggs are set and no longer jiggly.
- Remove from oven and enjoy!
