These Citrus Marinated Drumsticks are calling your name! Listen…can you hear them?! They are saying “come make me all summer long, you will have no ragrets!”
We have not stopped loving on these drumsticks since I first made them a few weeks back. They have been on heavy rotation, and for good reason; they are delicious and so dang easy to make. My favorite way to cook them up is under the broiler, but I know with the hot summer months quickly approaching, cooking them indoors is the last thing you will want to do. If you don’t want to be heating up your house, you can always grill them up on the ol’ bbq
This marinade is one of my absolute favorites in the entire world. It’s got a little Mexican flair to it and pairs well with literally ANYTHING. It makes my heart pitter patter just thinking about it. You can marinate any cut of chicken, we just like drumsticks cause they are easy and I don’t have to cut the meat up for my kids. This marinade also goes well with fish or flank steak. Sidenote: if marinating fish or red meat don’t let it sit for very long. An hour is good. The citrus will start to cook the fish (hello ceviche) and break down the fibers of the red meat which will make the meat a little tough.
Enough jabbering, lets get to the muy muy delicious recipe!
Ingredients
- 10-12 chicken drumsticks
- 2 oranges, juiced
- 1 lime, juiced
- 1 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp cayenne pepper
- 1 tsp sea salt
- 1 tsp oregano
- OPTIONAL: fresh cilantro
Instructions
- Mix seasonings together in a little bowl.
- Place chicken in a ziplock bag and add in the orange juice and lime juice. Sprinkle in the seasonings, close the ziplock back and shake up until everything is evenly dispersed on the chicken.
- Let marinate for 1 to 6 hours.
- Once ready to cook, place on a wire rack over a baking sheet.
- Turn oven to broil (high)
- Place chicken under broiler and let cook for 8 minutes.
- Flip chicken and let cook another 8 minutes.
- Flip one more time and broil for 4 min or until skin is nice and crispy.
- Remove and squeeze a little more lime juice over the drumsticks and garnish with fresh chopped cilantro!
If you want to grill them, place them onto direct heat for 10 min, then flip and cook another 10 minutes. Remember grills have hot spots, so make sure you move them around when you flip them so that some don’t get completely charred. Unless that’s what you like.
In the instructions I also talk about using a wire rack. That is completely optional, just helps the heat disperse a little more evenly around the chicken.
