Superbowl is tomorrow and I can think of very few things that are better than these Paleo Jalapeno Poppers!!
Jalapeno poppers always come to mind when there is a big sports event like the Superbowl happening! There are so many ways to make them too which is nice! You can have meat in them or just stuff the suckers with cheese, or in this case both! The way to make these “paleo” though is to use a cashew cheese. Now you can make your own and there are lots of recipes on Pinterest or the Goog, but I just prefer to buy it.
My favorite is by Siete as it legit tastes like the real deal. They really nailed the flavor and consistency. I love using it in my Chicken Enchilada recipe too! I’ve noticed that the price for it is very close to regular shredded cheese, or cream cheese, which is commonly used when making poppers. Except you won’t have the discomfort if you had it with dairy. (sidenote: if dairy doesn’t bother the ol’ tum tum, then go ahead and use your favorite cheese)
I like making a lot of the mixture because it can be frozen and used another time, or you can keep it in an air tight container for 4 days in the fridge and mix it with eggs, or have it on top of salad, etc. etc. Also……The ingredients call for 8 oz of the Siete Queso, but it comes in a 10 oz jar. I just scoop 95% of the cheese out and call it good. I don’t actually measure 8 oz out, mostly cause that means I have to get something else dirty lol!
Ingredients
- 12 large jalapenos, sliced in half, seeds removed
- 1 lb ground pork
- 1 piece of bacon, finely chopped
- 8 oz Siete Spicy Blanco Cashew Queso
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp sea salt
- OPTIONAL: sliced green onion, cilantro
Instructions
- Preheat oven to 350 degrees F.
- In a large skillet cook up piece of bacon. Chop up and set aside.
- In the same skillet cook up ground pork. Mix in garlic powder, paprika, and sea salt and cook 5-7 minutes or until pork is no longer pink.
- Turn off stove and stir in Siete "cheese" and add back in the finely chopped bacon.
- Scoop mixture into jalapenos and place on a parchment lined baking sheet.
- Bake in oven for 20 minutes.
- Remove and garnish with sliced green onions and cilantro
