I love me a good egg scramble. It’s the first thing I look at on a menu when I’m out to breakfast! Restaurants always have great scramble options and I always have a hard time choosing. However, restaurants need to get on the “putting broth in everything” train because this Egg Scramble with Bone Broth is glorious!
I’m pretty certain scrambles originated with chefs always screwing up omelettes! They messed up so many times they were probably just like forget it, let’s just put “scrambles” on the menu! You have free range for what you want to put in a scramble. As long as you put some bone broth in it. Yes, that’s right….BONE BROTH . There are so many benefits to consuming bone broth daily! Adding it to your eggs adds all the flavor and the extra nutrients. WINNING!
When making a scramble, you need to make sure you don’t have the stove up too hot otherwise your eggs will burn. Some people like to completely turn off the stove, but personally I don’t think the eggs get cooked long enough. I’m not a fan of slimy scrambled eggs. Anyone else with me on that?? (I know you are mom)
Remember you can put whatever you want into your scramble. The recipe below is a “basic” recipe, but you can never go wrong with a simple delicious recipe!
Ingredients
- 8 eggs, whisked
- 1/4 yellow onion, diced
- 1/2 cup bone broth
- 2 strips of bacon, diced
- 1 tsp sea salt
- 1 tsp smoked paprika
- 1 tsp pepper
- OPTIONAL: fresh cilantro or parsley
Instructions
- Dice up bacon and onion and place into a hot skillet.
- While bacon is cooking, crack eggs into a bowl.
- Add the bone broth, salt, pepper, and paprika. Whisk until combined.
- Turn stove to medium low and slowly pour the eggs right over the bacon pieces.
- Take a rubber spatula and continuously stir until eggs are scrambled and too your liking. About 5 minutes.
- Remove and garnish with fresh cilantro or parsley.
