PALEO CRANBERRY ORANGE LOAF WITH ORANGE GLAZE

You guys!!!  I did a baking thing!!  And it turned out so super scrumptious.  I seriously can not WAIT for you to make this PALEO CRANBERRY ORANGE LOAF WITH ORANGE GLAZE. I’m drooling just thinking about it!

PALEO CRANBERRY ORANGE LOAF WITH ORANGE GLAZE

I’m not a baker.  If you have been following me for awhile you know that about me.  Especially when it comes to Paleo baking.  It’s just so hard to get it right.  If you have ever tried paleo baking you know EXACTLY what I’m talking about.  Well I cracked the baking code!!  At least for making delicious loafs!

This Cranberry Orange loaf is perfectly sweet, perfectly tart, and perfectly perfect!! LOL.

PALEO CRANBERRY ORANGE LOAF WITH ORANGE GLAZE

The only thing that doesn’t make this “paleo” is the glaze which I made with regular powdered sugar.  There is just something about a good old fashioned glaze!  I did Google paleo powdered sugar and there are a few recipes out there….so check the ol’ goog if you are being wicked strict with your paleo diet.

I also did not try this with any other flour types, so I am not sure how it will work out, but if you do use a different flour (or even a paleo powdered sugar) let everyone know in the comments how it turned out!!

PALEO CRANBERRY ORANGE LOAF WITH ORANGE GLAZE

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: 4

Ingredients

  • 3 eggs
  • 2 cups almond flour
  • 1/3 cup coconut sugar
  • 1/3 cup ghee, melted
  • 1 1/2 tsp vanilla extract
  • 2 tbl tapioca flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tbl orange zest
  • CRANBERRY MIX:
  • 1 cup fresh or frozen cranberries
  • Juice of 1 orange
  • 1/3 cup coconut sugar
  • ORANGE GLAZE:
  • 1 cup powdered sugar
  • 2 tbl almond milk
  • 1 tbl orange zest

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl mix together dry ingredients. Add in your eggs, melted ghee, and orange zest and mix to combine.
  3. Place cranberries, orange juice, and coconut sugar in a small pot and put on stove over medium heat.
  4. Let cranberries cook down, mixing occasionally to prevent from burning, about 5-7 minutes.
  5. Gently fold cranberry mixture into the loaf batter.
  6. Pour batter into a parchment lined loaf pan and bang the pan a couple times to get out the air.
  7. Place in oven and cook for 35-40 minutes. Remove and let cool.
  8. While the loaf is cooling make your glaze by combining all your glaze ingredients and stirring well.
  9. Lastly drizzle glaze over the top of the loaf and enjoy!

This loaf is great in the morning with a cup o’ Joe, or at night as a little dessert.  Okay, okay, I lied.  This loaf is really good at any time of the day.  It also makes for a great holiday gift, if baking goods is your thing!!
