GREEN BEAN CASSEROLE

Thanksgiving is around the corner and one of the most popular dishes, other than turkey is the Green Bean Casserole!  I’ve made this version Whole30, Paleo, and Kid friendly to suit all your needs!!

Earlier this week I had a couple friends come over to hang out and to be my official taste testers for this Green Bean Casserole.  Mainly because I do not green beans in or around my mouth (but you already knew that).  When you agree to be a taste tester I always ask for for brutally honest feedback.  I want the recipes to be perfect for everyone and something that you will have in heavy rotation in your kitchen!  I want my recipes and blog to be a place that you guys come to time and time again!!

Before we get to the recipe, let’s talk real fast about a couple of important things about this green bean casserole.

  1.  Please, please, blanch your green beans.  Blanching is very easy.  All you do it put your green beans into a pot of boiling water. Let them boil for 5 minutes then immediately put them into an ice bath.  This stops the cooking process and the end result is a perfectly cooked green bean.
  2. Use pork rinds for the “crumbs” on top.  I love “Pork Panko” and you can get a 3 pack for $12 dolla dolla bills on Amazon
  3. The sauce will thicken as it sits and almost becomes a gravy! Nom Nom Nom

Alright, enough waiting, let’s get to this Whole30 and paleo friendly recipe shall we!

 

GREEN BEAN CASSEROLE

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 4-6

Ingredients

  • 2 lbs green beans, cut into thirds
  • 6 slices of bacon, chopped
  • 1 large shallot, diced
  • 1 can of coconut milk
  • 2 (4 oz) jars of diced pimientos
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 1/2 tsp pepper
  • 1 tsp nutritional yeast
  • 2 tbl arrowroot powder + 3 tbl water for slurry
  • OPTIONAL: Pork Panko

Instructions

  1. Preheat oven to 375 degrees.
  2. Cut your green beans and blanch them. Once cooled, place in a large casserole dish.
  3. Get a skillet nice and hot.
  4. Add your chopped bacon and cook until desired likeness. Set aside.
  5. In the same skillet add your diced shallot and cook for 5 minutes or until semi translucent and fragrant.
  6. Mix in the coconut milk, chicken broth, pimientos garlic powder, salt, pepper, and nutritional yeast. Mix until combined. Let come to a boil, then turn heat to low and let simmer for 5-7 minutes.
  7. After it has simmered, place the bacon back in and stir.
  8. Make an arrowroot slurry and pour into the mixtures. Stir to combine and let simmer another few minutes or until sauce has thickened.
  9. Ladle the sauce all over the green beans and top with the optional pork panko.
  10. Place in oven and let cook for 20 minutes or until golden brown on top.
  11. Let cool for a couple minutes and enjoy!
