This INSTANT POT ARTICHOKE ANTIPASTO PORK LOIN uses few ingredients, easy enough for a weeknight meal and fancy enough for the upcoming holidays!
This recipe kind of came as a surprise! I was “fridge foraging” for something to go with my pork loin when I came across some Trader Joes “Artichoke Antipasto” that was in my fridge. I had bought it the other week because 1. it has artichokes in it and 2. it has Whole30 compliant ingredients. I got home, raved about how excited I was to try it over on my INSTAGRAM and guess what happened?!?!
I didn’t love it.
Honeslty, I was a bit shocked. I usually love any and everything with artichokes in it. This however was lacking in flavors. It’s like it needs some tang like lemon to it, or even just some salt. It was really just blah. So into the fridge it went. That is until today! I brought it out of the fridge dungeon, added some extra flavoring into the Instant Pot along with the pork and it made buying it 100% worth it. Plus it was only like $2.99 so that makes it also worth it!
Other than fixing and making sure the flavor profile was bangin‘ I also had to figure out the correct cooking time to cook a pork loin in the Instant Pot. I scoured the ol’ Google and there were so many different times etc for cooking pork loin. Not only that, but people are all over the place with pork loins and roasts and chops. All are different cuts people!!! (sorry to yell)
Since I had a gigantic pork loin I cut it in half and “practiced” twice on the timing to make sure it was perfect. Cause ain’t nobody got time for a dry piece of pork! The other thing I ended up doing was putting it under the broiler for a hot minute (or 5) to crisp everything up! I highly recommend doing that, but it’s not a must. But if you decide to sprinkle some parmesan cheese over the pork, you MUST broil it! Pinky promise me you will do that!
Ingredients
- 2 lb pork loin
- 2 tbl ghee
- 3/4 jar of Trader Joe's Artichoke Antipasto Spread
- 1/2 lemon, juiced
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp sea salt
- 1/4 cup capers
- OPTIONAL: fresh parsley for garnish, parmesan cheese
- 2 tbl artichoke antipasto or the rest of the jar
- 1/2 lemon juiced
- 2 tbl arrowroot powder + 3 tbl water for slurry
Instructions
- Turn your pressure cooker to saute.
- Melt ghee and add the diced onion and cook 2-3 minutes. Add garlic and mix to combine.
- Take the pork loin and brown both sides, about 4 minutes.
- Next, sprinkle the salt over the top of the pork loin, add the capers and spread the Artichoke Antipasto over the top of the pork loin.
- Squeeze lemon over top and pour in the cup of chicken broth.
- Turn off saute mode, close lid and make sure vent is on "seal"
- Set Instant Pot to high pressure for 30 minutes.
- After the 30 minutes let it naturally release, which takes about another 10 minutes.
- Once all the pressure has released remove pork loin and place on a baking sheet and under the broiler for 5 minutes.
- Turn pressure cooker back on to saute mode. Add in the 2 tbl of artichoke antipasto and lemon juice. Let come to a boil and cook for 5 minutes.
- Turn saute off and pour in the slurry. Mix to combine.
- Pull pork loin out of the oven, let rest for 5 minutes, then slice.
- Pour gravy over the top and garnish with fresh parsley.
Notes
If using parmesan cheese, sprinkle on top before putting under the broiler!

I made this last night for dinner and am currently eating the leftovers for lunch. SO GOOD. The capers give the gravy a nice little bite and the artichoke antipasto is perfect on the pork. Oh my goodness I loved this recipe so much- thank you!!

Can you suggest an amount of time to cook this in a slow cooker? Every time I use the sauté in my instant pot, the burn function pops up and it no longer works till I clean it out and start all over. Very frustrating.
That is frustrating!!! I just would throw everything in, close the lid and start it up. Don’t bother with the saute function lol. If you want to do the crockpot, I’d do 6 hours in the slow cooker, however I have never tried it in there.

No, it would be the same cooking time. Just make sure you brown both first! 🙂
