HOMEMADE SALSA VERDE

I have been DYING to make homemade salsa verde for a couple years now.  Tomatillo salsa is actually my favorite out of the salsas.  This salsa knocks store bought salsa verde out of the park.  It’s fresh, has a bit of a bite, and super simple to make.  Like SUPER SUPER simple!

Homemade salsas are really where it’s at if you are looking for a real authentic taste.  Why?  Because you are using fresh ingredients. (but you knew that already)  It also stores really well in the fridge or you can even freeze it if that’s what you feel like doing!  Before we move on let’s talk cilantro real quick.  I love cilantro. In fact it’s safe to say that it is probably my favorite herb.  But I know a lot of people despise it.  When my friend told me that she couldn’t stand cilantro I just about slapped her across the face! Not really, but really!  But then I  had a few more people come to me telling me how gross it is, and it turns out, there are a lot of “cilantro-phobes” out there.  (here is an ARTICLE from the New York Times if you are interested)

Good thing guys and gals, if you are a she man cilantro hater you can just omit it.  I won’t judge.  Well maybe a little 🙂  Just kidding. I get it!!

Alright, I’m done talking about the best herb out there.  Let’s talk about tomatillos!  Those lovely green looking tomatoes that I want to stuff in my mouth.  They are so fresh and so tasty and I really should think about growing some next year in my garden.  My salsa verde loving heart would be so happy!  Tomatillos come with a “husk” and are hearty AF!  Remove the husk and throw in a plastic bag and they will be keep in your fridge for a few weeks.  You can also freeze them whole or sliced.  The tomatillo is the KEY ingredient to making salsa verde and is completely different that using an unripe tomato (a green tomato)

HOMEMADE SALSA VERDE

Prep Time: 5 minutes

Cook Time: 8 minutes

Total Time: 13 minutes

Ingredients

  • 6 tomatillos, quartered
  • 2 cloves garlic, cut in half
  • 1/2 small red onion, sliced
  • 1 small jalapeno, sliced in half
  • 1 tbl oil
  • pinch of sea salt
  • juice of 1 lime
  • 1/4 cup cilantro, packed

Instructions

  1. Heat your oil in a large skillet.
  2. Once hot add in your quartered tomatillos, garlic, red onion, jalapeno, and sea salt.
  3. Let it sit in the pan under med high heat to get a nice char. Flip so all sides get a nice golden brown color
  4. Remove from heat once veggies start to get soft, about 8 minutes.
  5. Place everything into a blender and add in the lime juice and the cilantro.
  6. Blend until desired consistency.
  7. Enjoy

      Yes and it’s amazing. I have a great guacamole recipe that uses radishes as well. Gives it a nice peppery crunch!
