BLUEBERRY LEMON MOJITO

This Blueberry Lemon Mojito is absolutely wonderful and refreshing.  It’s perfect for the warm summer nights coming up or when you are brunching so hard with your friends and family.

I love the versatility of a mojito!  You can keep it traditional with lime, mint, and some simple syrup, or you can jazz it up with a bunch of different fruits.  Surprisingly most fruit pairs really really well with mint.  Who woulda’ thunk?!!  (probably all of you actually).  I recently got the BEST blueberries from a local-ish farm called TRIPLE DELIGHT BLUEBERRIES and I knew I immediately wanted to make something with them using lemons from our lemon tree.

Back to the versatility of mojitos.  Perhaps you don’t drink alcohol.  That is TOTALLY fine, because mojitos are just as fantastic without the rum.  You do you. I promise no one will judge you! In the recipe I also use honey as the sweetener instead of simple syrup.  The honey gives it a touch of sweet without going overboard, which happens quite often when you use a simple syrup.  If you use a simple syrup just remember a little goes a long way!

This recipe only serves 2 people.  You can easily triple the batch if you want.  Omit the honey and booze and you’ve got yourself a Whole30 delicious mocktail! Yum, yum, yum!

BLUEBERRY LEMON MOJITO

Prep Time: 5 minutes

Cook Time: 5 minutes

Total Time: 10 minutes

Yield: 1-2

Ingredients

  • 1 cup fresh blueberries
  • 8 fresh mint leaves
  • 4 oz rum
  • 1 1/2 tbl honey
  • juice of 1 lemon
  • 4 oz white rum
  • 6 oz club soda (sparkling water works as well)

Instructions

  1. Muddle blueberries and mint together until completely smashed. Mint will become very fragrant.
  2. Add in lemon juice and honey and mix to combine. Let sit for a few minutes to let all the flavors combine together.
  3. Pour blueberries mixture into a shaker and add in the rum. Shake well!
  4. Pour halfway into an ice filled glass and fill the rest of the glass with club soda.
  5. Garnish with fresh mint, blueberries and a lemon slice.

 

Lets say you don’t like blueberries.  First off you are crazy (jk, jk, jk) second off, that’s okay.  My second favorite flavor combination is blackberries with lime and mint.  Use the same recipe just sub with the other fruit!
