Instant Pot Artichokes seem to be all the rage right now and for good reason; it cuts the cooking time by more than half! If you are low on time, but you are majorly craving artichokes, the Instant Pot is the way to go!
This is actually my 1st year doing these in the Instant Pot, mostly because pressure cookers can be a bit finnicky and I didn’t want to mess the beloved artichoke up by accidentally cooking it for too long. But this year I knew I had to do a blog post on it. So I tried and my 1st round was mush. womp womp. (cooked it for waayyy too long) My next attempt I cut them in half and guess what. Still mush. Womp womp again. Please, whatever you do, DO NOT cut them in half. Talk about a hot mess!
Luckily I have a bunch of plants growing in my front yard, so I wasn’t spending all my cash dollars on perfecting artichokes in the Instant Pot. Those suckers can get expensive, even living in California where they are abundant! Don’t worry though because like they always say; third times a charm! I finally nailed it!
Now onto the dipping sauce. You can dip artichokes in anything you feel like. I usually like to do an aioli of some sort, but other options are a garlic herb butter, balsamic and oil, ranch or caesar dressing……the dipping list can go on and on! I do like the Instant Pot method because it is quick, but as I mentioned on my INSTAGRAM, the boiling method has and always will be my favorite. My parents always boiled them and it’s just tried and true for me! But you do whatever method you prefer!
Ingredients
- 3-4 medium artichokes
- 1 cup cold water
- OPTIONAL: lemon slices
- 1/2 cup mayonnaise
- 1 1/2 tsp creole seasoning
Instructions
- Place your artichokes and lemon slices on the rack in your Instant Pot.
- Add the cold water and close lid.
- Place Instant Pot on the manual setting (high pressure) for 10 minutes and make sure vent seal is sealed.
- After 10 minutes, quick release the pressure. Remove artichokes and enjoy!
- Mix mayonnaise with creole seasoning.
