A couple weeks ago my husband came home with approximately 3,000 lbs* of brussels sprouts because they were on sale. (* slight exaggeration) I made a few of our favorite recipes like my PAN FRIED WHOLE BRUSSELS SPROUTS and my SALMON WITH SHAVED BRUSSELS AND BACON, but I was looking for something that I could do where I didn’t need to actually cook them. It’s always nice to have different options for eating veggies other than roasting! So I came up with this Chimichurri Brussels Sprouts Slaw, and guys, its muy, muy, M-U-Y bueno!
Now you may be thinking, raw brussels; NO THANK YOU!! But guys, you aren’t eating the whole thing (that’s just nasty); you are eating it as a slaw. So it’s chopped or shaved, and with some totally awesome flavors mixed into it. I would eat this a couple ways. Either as a side “salad” with some chicken, on top of fish, or over some steak….or in replacement to shredded lettuce on your tacos. You’ve totally got options! (I’ve noticed that I have a bad habit of saying”totally”) Sorry. But also not sorry at all!! 🙂
I’m super excited to share this simple, Whole30 slaw with you, so lets get to the recipe!
Ingredients
- 1 lb brussels sprouts, shredded
- juice of 1/2 a lime
- 1 tsp sea salt
- 1/3 cup pepitas
- 1 bunch of parsley
- 1 bunch of cilantro
- 1/4 cup red wine vinegar
- 3/4 cup extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp red chili flakes
Instructions
- Shred your brussels and set aside. (You can either cut them yourself or use a food processor or chopper).
- Make the chimichurri by putting all ingredients into a blender or food processor. Blend until combined.
- Pour chimichurri all over the shredded brussels sprouts.
- Add in the pepitas, lime juice, and sea salt and mix until well coated.
To achieve shredded brussels sprouts by hand cutting them, simply slice of the bottom and cut in half. Thinly slice the brussels sprouts length wise until you have shredded them! Easy Peasy.
As I mentioned earlier it is great on top of tacos. Especially carnitas. But it is a nice fresh side to have with a big fatty steak too! And now that I’m hungry and thinking about what else I would put this on, it would be fantastic with eggs and roasted potatoes. Someone come make me this cause now I’m hangry!!
