OATMEAL RAISIN CHOCOLATE CHIP COOKIES

One of my favorite cookies (other than a snickerdoodle) are oatmeal cookies. And these oatmeal raisin chocolate chip cookies are the just ticket if you are looking for a little sweet without all the added junk in them.  I’d call them paleo, but they have gluten free oats, so you know….can’t call them that. The paleo police will be out in full force!

I don’t post many cookie recipes, mainly because I eat all the dough before I even cook them. (Anyone else have that problem?!!) But I know you all LOVE cookies, especially “healthy” cookies, so I took one for the team and ate only a smidge of dough. Quality control; I had to make sure it tasted okay.  If the dough tastes good then the cookie should taste good right?!!

If you can get your hands on MAROO raisins I highly recommend.  They are bigger and juicier and what should always and forever be put into oatmeal cookies. Check out Amazon.  Seriously, you will never ever go back to regular, boring, raisins! But, I’m not here to bag on other raisins.  If that’s all you have then that is great and the cookies will still turn out muy delicioso!

Oatmeal Raisin Chocolate Chip Cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients

  • 1 1/2 cups almond flour
  • 1 cup gluten free oats
  • 1/2 cup Maroo raisins
  • 1/2 cup chocolate chips (I use enjoy life)
  • 1 egg
  • 1 tsp baking powder
  • 1 tbl cinnamon
  • 1/2 cup honey
  • 1 tbl vanilla extract
  • 1/2 tsp nutmeg
  • 1/4 cup ghee or coconut oil, melted

Instructions

  1. Preheat oven to 350 degrees.
  2. Soak raisins in a bowl of hot water while preparing the other ingredients. (this is completely optional)
  3. Combine, flour, cinnamon, nutmeg, and baking powder together.
  4. In another bowl whisk together the egg, melted ghee or coconut oil, honey, and vanilla extract. Pour in the dry in ingredients and mix to combine.
  5. If soaking the raisins, drain and add to the bowl along with the chocolate chips and the oats. Fold to combine.
  6. Roll into balls and place on a parchment paper or silicone mat lined baking sheet. Press cookies down so they are flat.
  7. Bake for 8-10 minutes or until golden brown.

As I mentioned earlier, soaking the raisins is completely optional.  A follower had told me that trick to get plump, juicy raisins and I recommend you don’t skip that step.  It helps them not get all dried out.  The heat from the oven will take whatever moisture it can from wherever it can!  I also love these straight out of the oven nice and warm. Not gonna lie; some vanilla ice cream sandwiched between them would be pretty spectacular as well!

I would also check them out at around 10 minutes.  Every oven is different, but mine cooks things up fairly fast. If you follow along on my Instagram, a couple weeks ago I burned the crap outta them and they were only in for 12 minutes!

  1. I am currently waiting for my first batch to cool, but wanted to leave a little comment for future bakers. Please update you directions to include adding the honey with the wet ingredients. I missed that completely, until I was mixing the wet with the dry. Not a problem, I caught it.
