SHEET PAN BLUEBERRY GLAZED SALMON

My family absolutely loves salmon, but lets be real, using the same herbs and what not on it every single time can get a bit boring!  When I took over Whole30recipes on Instagram back in January, I made it one of my missions to give all of you something fun, a little out of the ordinary, and completely delicious.  Enter this Sheet Pan Blueberry Glazed Salmon.  Heeellloooo nurse! (name that show)

As I have mentioned many times before, the trick to PERFECT salmon is sticking in a COLD oven, then turning oven on and starting the timer.  Don’t ask questions as to why it works.  It’s just how I have always done it and it’s friggin’ marvelous!! 🙂  So do it this way OR ELSE.  I kid, I kid!

Anywayyy, have you ever had fruit with fish??!!  Fish and fruit surprisingly go really well together.  I’m not talking about the “normal” fruit that gets used with fish (basically any type of citrus),  I’m talking fruit like strawberries, mangoes, pineapples, and yes blueberries!!

Here’s what’s extra awesome about cooking your fish up this way…..

  1. It’s on a sheet pan, so easy clean up.
  2. Your veggies will cook up alongside with it.
  3. You can have a full blown meal on the table in less than 30 minutes!

Alright, enough yapping Jenn, lets get going on this easy peasy, super delishy recipe!

Sheet Pan Blueberry Glazed Salmon

Cook Time: 25 minutes

Total Time: 25 minutes

Yield: 6-8

Ingredients

  • Whole or individual wild caught salmon
  • Drizzle of oil
  • Pinch of sea salt
  • lemon slices
  • Veggies of choice
  • Blueberry Glaze:
  • 1 pint of fresh blueberries, or 10 oz bag of frozen blueberries
  • 1 cup balsamic vinegar

Instructions

  1. Place your salmon and veggies on an aluminum lined baking sheet.
  2. Drizzle the veggies and the top of the salmon with oil. Sprinkle sea salt all over the top.
  3. Place your salmon into a COLD oven.
  4. Turn oven on to 400 degrees and set timer for 25 minutes.
  5. While fish and veggies are cooking, take a small pot and add in your blueberries and balsamic vinegar.
  6. Bring to a boil and let reduce for 10 minutes, stirring occasionally.
  7. When 10 minutes is up, pour blueberries all over salmon. Top with lemon wedges and let cook until your timer goes off.
  8. Remove from oven and add a little more salt if desired.

I didn’t really specify in the recipe how many pieces of salmon to use.  That’s because this method will work with an entire piece of fish or just one lone salmon fillet.  The only change I would do would be halving the blueberry glaze if you are only using a couple pieces of fish.

  1. This looks so good! I am trying this tonight. Do you set the oven at 400 degrees on regular or convection? I am still learning my ovens. I tried your prosciutto egg cups on my convection setting and they came out perfect at 13 minutes so I am wondering if the salmon should also be baked on convection? Thank you!

    1. Either way will be fine. I always use my convection just out of habit, but it’s fine without it too!!

    1. I would not use red wine vinegar for this. You could try white balsamic, but it may change the taste a bit. I have not tried it. Balsamic vinegar thickens and mixes very well with the blueberries.

  2. How would you season the Brussels sprouts or the green beans when accompanying them with the blueberry glazed salmon?

    1. I would keep it simple with a little salt and pepper. You can drizzle a little balsamic over them as well.

  3. I made this last night and was completely blown away by how good it was, and how EASY! Salmon turned out perfectly, though it was a strange feeling to put food into a cold oven lol. Loved the flavor combo of the salmon with balsamic and blueberries. Will definitely be adding this to our regular rotation!

    1. LOL, I know it is a bit odd cooking it like that, but its like magic lol. I’m so happy you enjoyed it, it’s one of our absolute favorites!

  4. Would strawberries work just as well??

    Also, do you start the 25 min timer after the oven gets to 4000°, or start it as soon as putting the salmon in the oven??

    1. It would probably be GREAT with strawberries!
      Put the salmon into the cold oven, then turn the oven on at 400, then start the 25 min timer!
