I’m not gonna lie, these baked jalapeño rings are probably my most favorite thing I’ve made. And I know I say that a lot, but this time I REALLY mean it!After you makes these, you will have dreams about them. They are insane!
I love dipping them in some aioli, but my absolute favorite way to consume them is on top of a burger. They crispiness and the spiciness take the burger above and beyond. And now that I think about it they would also be fantastic in a salad, on top or some morning eggs, or even stuffed into a baked potato. Oh man, I’m so hungry now!!
Perhaps you just CAN’T with jalapenos. They are too spicy for that sweet little mouth of yours. You can use mini bell peppers instead. Make sure that you keep the seeds in tact just as you would the jalapenos or else I will hunt you down. Just kidding. I don’t know where you live. Or do I?
Let me stop jabbering and get to the recipe. That’s what you are here for anyway!!
Ingredients
- 3 jalapeños, sliced (do not scoop out the middle)
- 1 egg, beaten
- 1/2 cup almond flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1/8 tsp cayenne pepper
- 1/2 cup mayonnaise
- juice of half a lemon
- 1 tsp garlic powder
- 1/2 tsp sea salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 400° and drizzle oil on a baking sheet.
- Mix almond flour and seasonings in a bowl, and whisk an egg into another bowl.
- Take your jalapeño slices and dip into the egg, then into the almond flour mixture.
- Place on baking sheet and bake for 10 min. Flip and bake another 5 or until golden brown.
- While jalapenos are baking, make your lemon aioli by mixing everything together in a small dish.

Spices looked way too heavy so I cut it down to 1 tsp each paprika, salt and onion powder (or were you meaning 2 tsp of a mix of the spices and 1 of the other mix?). I would still cut it down some from there. I did love, however, how they came out!! Perfect for adding to a salad. Thanks!!
