SNAP PEAS WITH PEPITA LIME VINAIGRETTE

A couple months ago, I made this “salad” and I can’t stop thinking about it. The vinaigrette will literally freak you face off!
I’m actually gonna make this today, but adding prosciutto into it, because yum.

SNAP PEAS WITH PEPITA LIME VINAIGRETTE

Ingredients

  • -1/4 c avocado oil
  • -1 lb snap peas, blanched
  • -1 1/2 tsp apple cider vinegar
  • -3 small green onions
  • -1 green garlic (also called baby garlic), finely diced
  • -juice of 1 lime
  • -handful of Pepita's
  • {Baby garlic is garlic harvested before it's mature. The flavor is very mild compared to a clove of garlic}

Instructions

  1. Blanch snap peas by steaming for 2 min then immediately pouring into an ice bath
  2. Put lime juice, apple cider vinegar, green onions, and garlic in a small bowl. Slowly whisk in the oil.
  3. Pour over peas and top with pepitas.

This vinaigrette goes with everything, not just these awesome little snaps. Pour it over a salad, or use it as a marinade for fish or meat.
