I love me some good chili fries. I mean, don’t you guys too?!! I used my bomb ass pumpkin and beef chili that I shared on @whole30recipes on Instagram a couple months ago, and put it over some sweet potato fries.
So. Freakin. Yum.
I topped my husbands and kids with cheese because in all honesty what are chili fries without the cheese!!!
(I’ve been limiting my dairy intake cause my tummy says no no no)
NO BEAN CHILI FRIES
-2 large sweet potatoes, cut into fries
-2 lbs ground beef
-1 yellow onion, diced (save 1/4 of it for topping the fries)
-1 1/2 cans fire roasted tomatoes
-1 can diced green chilis
-1/2 can pumpkin or 1 pumpkin roasted.
-2 tbl cumin
-2 tbl garlic powder
-2 tbl cinnamon
-handful of spinach
–Preheat oven to 425°
–Slice sweet potato and stick fries into a zip lock bag with a little oil, salt, and pepper. Shake.
–Place on baking sheet and cook 10 min, then flip and cook another 10 min (you may need to check at min 6 or so to make sure its not burning)
–In a large pot cook up ground beef. Add all other ingredients except for spinach. Put a lid on it and let simmer for about 40 min.
–Add spinach at end.
–Place fries on a plate and top with chili. Add cheese if you are not doing whole30 or living paleo!
Whole30: no (omit cheese to make compliant)
Paleo: no
