Don’t let the title fool you….you can do this with any color cauliflower. 🙂
A great way to introduce more veggies into your family meals is have each kid pick something out by giving a color for them to find in the produce.
  Almost like a scavenger hunt. It’s a great way to get your kids involved with picking veggies out and learning about what they are.
Everyone and their moms always rave about cauliflower mash, but I mean why wouldn’t they?!!? It practically tastes like regular ol’ mashed potaters.
GARLICKY CAULIFLOWER MASH
-1 head of cauliflower. Any color 🙂
-1 tbl ghee
-1 tbl bacon grease (omit to keep it vegetarian, and just double the amount of ghee)
-2 cloves garlic, one for mincing, one for cutting into 3rds.
-1 tbl dried parsley
-1/2 c unsweetened almond milk
-salt and pepper to taste
–Steam your cauliflower and sliced clove of garlic for about 10 min.
–Once steamed, remove steam basket and pour almost all of the water out of the pot that you use to steam.
–Pour cauliflower into pot.
–Add almond milk, ghee, and bacon grease.
–Blend using preferred method. I use an immersion blender.
–Add in spices and minced garlic and fold into cauliflower.
Out of all 5 kids, only 1 doesn’t like it, but it’s a texture thing because he also doesn’t like mashed potatoes either!

hahaha! Sometimes I cut up a small yellow potato and steam it with the cauliflower. Then just do as usual. Do that a couple times, then one day omit the potato all together! Sneaky sneaky. lol
