I love soup. It’s the “I could eat it everyday for the rest of my life and be completely satisfied” kind of love. The rest of my family however, are the complete opposite. They like soup, but there are plenty more things out there that they would choose first. This Roasted Asparagus Potato Soup though, is the one exception. (pssst: that means it’s super kid friendly)
That means Winner Winner asparagus soup dinner.
This asparagus soup is one of my kids favorite meals. I always suggest this to people who have picky eaters in their house. It’s full of veggies (asparagus, duh), but because of the added potatoes and bacon you really can’t tell that the whole thing is actually asparagus!! That is why it’s so great for picky eaters! WINNING.
The key to making this soup is roasting the asparagus. So get that that asparagus nice and toasty. If you want you can roast the potatoes as well, but I usually just boil them in the pot while the asparagus is cooking. The flavor combo will take you on an adventure. A soup adventure!!
If you are vegetarian obviously omit the bacon. But if you are a meat eater, then pile that bacon on as much as your heart desires. Roasted asparagus and bacon are practically besties. They should always be together 🙂
Ingredients
- 3 lbs asparagus
- drizzle of oil for asparagus
- 1 lb fingerling potatoes
- 4 cups chicken broth or vegetable broth
- 2 cups water
- 3 slices of bacon, crumbled
- 1/2 red onion, diced
- 1 clove garlic, minced
- 1 1/2 tsp salt and pepper
Instructions
- Preheat oven to 400°. Place asparagus on baking sheet and drizzle with oil and a little salt.
- Roast for 18-20 minutes, stirring once.
- While asparagus is roasting, steam or boil your potatoes. This will take about 10 minutes or so depending on the size.
- In a large soup pot, heat some oil. Add diced onion and minced garlic and saute for 2-3 minutes.
- Add in your potatoes and broth.
- Cook your bacon and set aside until the end
- Once asparagus is done place in pot with potatoes. Take an immersion blender and blend everything until nice and smooth. If it is too thick add in more water.
- Add in your bacon, salt and pepper and enjoy
