I haven’t had a fritter for years. My grandfather used to make potato fritters (or potato pancakes) and we used to gobble them up! They were so. darn. delicious.
So tonight I whipped up a batch of chicken zucchini fritters to satisfy my craving for the delicious potato-ey goodness my grandpa used to make.
(Side note: I would have actually made his “potato pancakes” but alas, I have no potatoes in the house)
My family and I probably ate one too many of them, but let me tell you…..so worth it!
Fritters are pretty versatile, so add what you like, I’m sure they will be amazing. And while you’re at it, dip it in some avocado purée or a garlic aoili.
CHICKEN AND ZUCCHINI FRITTERS
(Whole30 compliant)
-3 large zucchini, spiralized or grated
-1 lb ground chicken
-1 tbl chives
-dash of salt, pepper, & garlic powder
-Spiralize the zucchini and pat dry to remove extra water. Add ground chicken and seasonings and mix in your bowl.
-Heat oil of choice (I use avocado oil).
-Form into patties and place in skillet. Flatten and cook 5 min each side.
-Top with avocado purée (avocado, lime, water) to make it extra tasty!

Could you possibly use yellow summer squash in place of zucchini? I have tons of squash, zucchini would require a trip to the grocery store …
Yes. Yellow squash would work too!! Use those bad boys up 😉
