I’m kind of at a loss. I see all these fall recipes posted everywhere and all I want to do is drink hot coffee and make fall foods. But I’m in California, where its sunny and 75°, 360 days a year. You may be thinking, you guys are so lucky, I’d love to live here, and I agree it is nice…. in the summer. But it’s mid November, and just yesterday I had a frapuccino! A friggin’ frapuccino. Ugh.
So in my attempt to make it fall in our house I made these baked avocados this morning. Instant fall satisfaction. If you haven’t made these before, you should seriously consider it.
Baked Avocado with Egg
-1 avocado, sliced in half, pit removed
-2 small eggs
Slice avocado in half. Remove pit and scoop out some of the avocado. Crack the egg into the middle.
Place in oven at 425° for about 15 min. 15 min will give you a hard egg, if you want it more gooey shorten the time in the oven.
Garnish with your favorite spices or herbs. Devour. In a classy way of course.
