Have you ever used beef jerky in a dish before? Yah, me neither, until recently. Usually we eat it as a snack, but when OBERTO sent me some of their all natural beef jerky flavors, I was determined to use them in recipes. Determined I say!! Well, let me be vain for just a second here….cause I friggin’ hit the nail in the head with this fried rice recipe. It tastes just like the real deal and I’m pretty proud of myself. Guys, it’s kinda hard to “healthify” things like pork fried rice without it tasting nasty. So yah, I’m gonna pat myself on the back for sure!!
You know the food I always forget about, but absolutely love….swedish meatballs. Have you ever had them? Yah, they are pretty bomb!! The only downside….the sauce is usually all cream. Not saying that cream is bad, if you like it then put it in! I’m not yo’ mama! But cream and me….we do not go hand in hand, in fact so much so, that if I had cream I would regret ever making these balls, which I really, REALLY, don’t want to do!
Meatloaf. People either love it, or hate it. Am I right?!! I think when people think of meatloaf they think of it being super dry. Because honestly, all meatloaf is, is a gigantic meatball. I mean think about it…..the ingredients are almost similar, yet you never see people complaining about meatballs. Meatloaf on the other hand; it always gets the raw end of the deal.
I haven’t had a sloppy joe since I was like 12. Yesterday I was feeling nostalgic and decided to introduce my kids to the wonderfulness that is the sloppy joe!
My kids are hit or miss when it comes to peppers. My oldest kids and youngest baby love them, but those in- betweeners….lets just say they enjoy giving me gray hairs!
Last night, the middle children Ate. It. All. No complaints. There must be something magical about sloppy joes.
SLOPPY JOE STUFFED BELL PEPPERS
– 2 lbs ground beef
– 1/2 green bell pepper, diced
– 1 (14.5 oz) can diced tomatoes, drained
– 1/2 c + 1 tbl BBQ sauce ***
– 1 tbs apple cider vinegar
– 1 tbs yellow mustard
– 5 bell peppers, cut in half
– 1 c chicken broth
– Optional: 1 tsp honey
–Preheat oven to 400°.
–Slice peppers in half, clean out and place in baking dish.
–In a large skillet, cook up ground beef.
–Add in diced green bell pepper and tomatoes. Mix around.
–Add in BBQ sauce, mustard, and apple cider vinegar. (If using honey add here too)
–Mix around, coating everything
–Scoop meat into peppers. Add 1 cup broth to bottom of baking dish.
–Cover with foil and cook for 40 min.
–Take out and let cool for 5 min.
**I make my own BBQ sauce. If doing paleo or on Whole30, you best bet is to make your own. Otherwise, I suggest Stubb’s hickory bourbon sauce. 🙂
