I’ve been broadening my horizons with persimmons lately, and this Mexican Persimmon and Broccoli slaw is off the chain. (does anyone even say that anymore) Persimmons are delicious, but also odd. I think it’s safe to say that the majority of people do not know what the heck to do with a persimmon! I was totally that person a couple of years ago and was always intrigued at the store to get one, but just didn’t know what to do with them!
Fear not friends, I got your back and will show you how can incorporate persimmons into your meals! Persimmons add a nice crunch and a bit of sweetness to dishes and are wonderful on there own as well. We like to eat them just like an apple!
This warm brussels and persimmon salad is about to blow yo’ mind!! I have a confession, I never had a persimmon before last year. I don’t know why, because they are sooo great! Slightly crunchy like an apple, a little sweet, perfect for snacking or putting into recipes.

I have been wanting to write a how to cook eggs in the instant pot for awhile now! Hard-boiling eggs was the game changer when it came to deciding whether the Instant Pot was worth it!! Previously I had tried every way possible to cook an egg to perfection. (my favorite method before the Instant Pot was steaming them)

Have you guys hopped on the Instant Pot train yet? It took me a good couple of years to FINALLY give in and get one, and other than having absolutely no room in my tiny kitchen to store it, it is a great “appliance” to have. For the last few months over on my Instagram stories, I’ve documented my Instant Pot adventures. What has worked, what hasn’t (honest bomb….I still am working on perfecting veggies in there), correct timing; there really is a bit of a learning curve to it, but once you get the idea of it, it’s pretty easy!
