SLOPPY JOE STUFFED BELL PEPPERS

Sloppy Joe Stuffed Bell Peppers. Uh, yeah, you heard me correctly. Sloppy Joes. Stuffed into a pepper. And they are bloody fantastic! Seriously, when was the last time you had sloppy joes? For me I was probably 12 and I’m pretty sure I remember it coming from a can.

SLOPPY JOE STUFFED BELL PEPPERS

From what I remember, sloppy Joes were kind of barbequey, kind of sweet, and super sloppy. Very similar to my children, actually; well, minus the barbequey part!!  That would just be weird!

Making sloppy joes and then stuffing them into a bell pepper is a great way to get all kinds of healthy into your body. Fun fact: Bell peppers are full of vitamin C and antioxidants.  If you have a veggie hater in your house, or perhaps you aren’t a big fan of vegetables; this is a great dish to introduce them. The meat mixture has such good flavors that you won’t even notice that it is surrounded by a bell pepper!

SLOPPY JOE STUFFED BELL PEPPERS

If you are currently on a sugar hiatus you can get my sugar free BBQ sauce HERE. I also recommend Tessemaes, but feel free to use whatever sauce floats your boat!

The Sloppy Joe mixtures freezes wonderfully, so make a ton, freeze, then take it out when you are ready to get sloppy.  If freezing just isn’t your thing, it will last in an air tight container for 4 days in your fridge!  We love eating the next day with a fried egg on top. So nutritious and delicious!

SLOPPY JOE STUFFED BELL PEPPERS

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients

  • 2 lbs ground beef
  • 1 tbl oil or ghee
  • 1/2 bell pepper, any color, diced
  • 1 14.5 oz can of diced tomatoes, drained
  • 1/2 c + 1 tbl BBQ sauce
  • 1 tbs apple cider vinegar
  • 1 tbs yellow mustard
  • 6 bell peppers
  • 1 cup water
  • 1/2 bag of frozen cauli-rice
  • OPTIONAL: fresh parsley for garnish

Instructions

  1. Preheat oven to 400 degrees.
  2. Take tops off of bell peppers, remove seeds, and place inside a casserole dish.
  3. In a large skillet heat up some oil. Add your ground beef and cook it for 5-7 minutes or until almost done.
  4. Remove some fat from the pan then add in your diced bell pepper.
  5. Next add in drained tomatoes, bbq sauce, apple cider vinegar, and yellow mustard. Stir to combine.
  6. Scoop the meat into the peppers. Add 1 cup of water to the bottom of the casserole dish then cover with aluminum foil.
  7. Cook for 30-40 minutes.
  8. Remove from oven and garnish with fresh parsley

    1. No, put it in about a couple minutes before you stuff it all into the pepper. For some reason, the recipe “card” isn’t letting me fix that!
