MEXICAN CHICKEN WITH CAULI RICE AND OKRA

This Mexican Chicken with Cauli Rice and Okra is mouthwatering good, comes together in a cinch, and is a nice fun change up to normal Mexican cuisines that we are all used to! (oh hey okra!)

MEXICAN CHICKEN WITH CAULI RICE AND OKRA

 This dinner came on a whim the other day when I was “fridge foraging” for something to make. I already had chicken marinating, but I had no clue what else was going to go with it.  I’m kinda glad that I always have okra stashed in the freezer.  Usually I save the okra for my SLOW COOKER JAMBALAYA but since I didn’t have any other veggies around I thought, “why the heck not”  Guys! Okra mixed with Mexican/Spanish falavors is divine!  

I suggest trying it with okra first, but if you are not a fan of it at all you can sub with your favorite vegetables.  Okra is a little weird because when it cooks it gets kind of slimy, but I really like it cause it helps thicken up your dish, and once it’s all mixed in you can’t tell that it is slimy anymore! Zucchini and asparagus would be “the tits” in this!

MEXICAN CHICKEN WITH CAULI-RICE AND OKRA

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 1 tbl avocado oil (or olive oil)
  • 1 bag of frozen okra
  • 1 bag of cauli-rice
  • 4-6 chicken breasts
  • 1 cup chicken broth
  • OPTIONAL: cilantro and a squeeze of lime
  • For the Marinade:
  • 1/2 tsp chili powder
  • 1 tbl dried minced onion
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp dried parsley
  • 1/2 cup fresh orange juice
  • 1 tbl apple cider vinegar
  • 1 tsp sea salt

Instructions

  1. Mix all your seasonings together.
  2. Place your chicken into a ziplock bag. Add in the seasonings, orange juice, and apple cider vinegar. Let marinate for at least an hour or overnight.
  3. Get your oil nice and hot in a large skillet.
  4. Add your chicken pieces and let cook 5-7 min each side or until golden brown. Set aside.
  5. In the same pan de-glaze it by pouring in your chicken broth. Scrape all the bit off the bottom of the skillet. Let it "reduce" for a few minutes then add in your cauli rice and okra.
  6. Mix well and then cover for another 5-7 minutes stirring a couple times.
  7. Once okra and cauli-rice are cooked add your chicken back in and mix together.
  8. Garnish with some cilantro and a squeeze of lime.
