CARAMEL HASSLEBACK APPLES

Fall has to be my favorite season. The weather finally is getting a bit cooler and the best part….it’s apple season!! Everyone always raves about pumpkins, but lets be real, apples are WAY cooler than pumpkin!! There is just so much more you can do with apples.

The other week I was out with some friends and we passed by these caramel apples that looked sooooo good. Like jaw dropping good, and I have a soft spot for caramel apples, I mean don’t we all! I ended up passing on getting one, but making my own caramel sauce at home has been on my mind ever since! You can slice apples or bananas and just straight up dip them in this sauce or you can bake the apples (which I highly suggest) and drizzle the sauce all over them. You could even make little caramel apple pies that would be perfect for the upcoming holidays!

Baking apples is very easy. I like to hassleback them that way all the good stuff goes in between each slice. So. dang. bomb. You can find the recipe for how to bake hassleback apples HERE. Make them while you are making the caramel sauce and they both will be ready around the same time!

 

CARAMEL HASSLEBACK APPLES

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Ingredients

  • 1 13.5 oz can of full fat coconut milk
  • 1/2 cup coconut sugar
  • pinch of salt
  • OPTIONAL: splash of vanilla

Instructions

  1. Take your can of coconut milk and shake it up.
  2. Pour the coconut milk into a sauce pan and add in your coconut sugar. Stir around and bring to a boil over medium high heat.
  3. Once boiling, turn the heat down to a simmer, but make sure it still has a little boil to it.
  4. Stir frequently to prevent from burning.
  5. Let slowly boil for 30-35 minutes or until it is reduced by half and thick.
  6. Once it has reduced by at least half and is nice and thick take off of the stove. Add in your pinch of salt and the "optional" splash of vanilla. Mix until fully incorporated.
  7. The caramel sauce will thicken as it cools down.
  8. Once cool, pour into a glass jar and it will keep for a week or so in the fridge.

If you are a little weary about the flavor of this like I was, don’t be!! It doesn’t taste coconutty at all!!  My husband said it tasted like he was eating caramel corn. I do have to note though, that I never tested it to see if it would completely harden onto an apple, like a real caramel apple.
