BREAKFAST STUFFED MUSHROOM

Sometimes I like to get a little fancy for breakfast. And I may be alone in this thought, but stuffed mushrooms have always screamed fancy. Or appetizer-ie. Anyyy-wayyy….

BREAKFAST STUFFED MUSHROOM

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Ingredients

  • -1 portobello mushroom, stem removed and cleaned
  • -1 egg
  • -A few spinach leaves
  • -1/4 c balsamic vinegar
  • -Parsley
  • -Salt and Pepper
  • -OPTIONAL: bacon crumbles

Instructions

  1. In a zip lock bag marinate your mushroom in balsamic.
  2. While marinating, turn your broiler on.
  3. In a small baking dish or on a cookie sheet place mushroom on and stick under broiler for 3 min on one side then flip and broil another 3.
  4. Turn oven to 375°. Remove and place your spinach into the mushroom and crack your egg into mushroom too.
  5. Put back into oven and cook for 15 min or until egg is to your liking.
  6. Top with parsley, salt, pepper, and bacon crumbles if using.
